On the way home I stopped by Cypress Gardens and rode in a canoe around the swamp. The park was built 100 years ago - it used to be a rice farm. The owners drained the rice patties and let it grow wild. This is the only way to get cypress started according to the tour guide. Anyway, once the trees were established they filled it in with water and voila, instaswamp. Cypress trees live to be thousands of years old.

The tour guide made a point to tell us about the over forestation of the cypress trees back in the day. The wood is waterproof and termite proof, and is now very expensive.
